Chicken Pickle
Homemade the easy way!!
I being a South Indian always had some kind of pickle in my plate of food, raw mango (which i don't like), lemon the yum yum or chicken urukai (pickle). Pickle has been a best friend for tasteless, NO NO not tasteless but yes pale food, remember dal khichadi and urukai,
Let me correct myself DAL KHICHADI & Lemon Pickle, yup associative craving.
Today, the recipe i am about to share is not invented by me but yes is a tried and tested one.
CHICKEN PICKLE
Ingredients-
Chicken (boneless) - 250gms
Ginger garlic paste - 5-6 teaspoon
Lemon juice - half a lemon
Curry leaves- handful
Turmeric powder a pinch
Red chilly powder- Coriander powder - Garam masala - 2 : 3 : 1 ratio
Salt to taste
Procedure -
Step 1 - Wash boneless chicken pieces, add in salt and turmeric powder mix well and put it on a low flame in a pan, cover it. The chicken will start oozing its own water, let it cook in the water till the water dries up. Later keep it in a bowl to cool down.
Step 2 - Heat oil fry chicken till golden brown
Step 3 - Remove the chicken in a bowl, in the same oil fry ginger garlic paste till brown
Fry till golden brown, add red chilli, coriander and garam masala powder in the pan
Add chicken and cook till dry, remove it in a bowl
Add lemon juice n stir well
Let it cool down and store it in a glass jar in the refrigerator
Chicken pickle is ready to use, shelf life 30days when stored in the refrigerator
